Flavorful Eggplant

Stir-Fry Recipe

Ingredients:

  • 1 large eggplant (cut into bite-sized cubes)
  • 1 bell pepper (sliced into thin strips)
  • 1 onion (sliced)
  • 2 cloves of garlic (minced)
  • 1 tablespoon of ginger (minced)
  • 2 tablespoons of soy sauce
  • 1 tablespoon of hoisin sauce
  • 1 tablespoon of rice vinegar
  • 1 tablespoon of olive oil
  • 1 teaspoon of sesame oil
  • Salt and pepper to taste
  • Green onions for garnish (optional)
  • Red pepper flakes for garnish (optional)

Instructions:

  1. Preparation:
  • Wash and cut the eggplant into bite-sized cubes.
  • Slice the bell pepper and onion.
  • Mince the garlic and ginger.
  1. Cooking:
  • Heat the olive oil in a large skillet or wok over medium-high heat.
  • Add the garlic and ginger, sautéing until fragrant (about 1 minute).
  • Add the onion, stir-frying for 2-3 minutes until it begins to soften.
  • Add the eggplant, stir-frying for 5-6 minutes until it starts to soften and brown.
  • Add the bell pepper, continuing to stir-fry for another 3-4 minutes.
  1. Seasoning:
  • Pour in the soy sauce, hoisin sauce, and rice vinegar, stirring to coat the vegetables evenly.
  • Season with salt and pepper to taste.
  1. Serving:
  • Transfer the stir-fry to a serving dish.
  • Garnish with green onions and red pepper flakes if desired.
