Delicious Squash Stir-Fry

Recipe Ingredients:

     

      • 2 cups of squash (sliced into thin strips)

      • 1 bell pepper (sliced into thin strips)

      • 1 carrot (julienned)

      • 1 onion (sliced)

      • 2 cloves of garlic (minced)

      • 1 tablespoon of ginger (minced)

      • 2 tablespoons of soy sauce

      • 1 tablespoon of olive oil

      • 1 teaspoon of sesame oil

      • Salt and pepper to taste

      • Sesame seeds for garnish

      • Fresh cilantro for garnish (optional)

     

    Instructions:

       

        1. Preparation:

         

          • Wash and slice all vegetables.

          • Mince the garlic and ginger.

           

            1. Cooking:

             

              • Heat the olive oil in a large skillet or wok over medium-high heat.

              • Add the garlic and ginger, sautéing until fragrant (about 1 minute).

              • Add the onion, stir-frying for 2-3 minutes until it begins to soften.

              • Add the bell pepper and carrot, stir-frying for another 2 minutes.

              • Add the squash, continuing to stir-fry for 3-4 minutes until all vegetables are tender-crisp.

               

                1. Seasoning:

                 

                  • Pour in the soy sauce and sesame oil, stirring to coat the vegetables evenly.

                  • Season with salt and pepper to taste.

                   

                    1. Serving:

                     

                      • Transfer the stir-fry to a serving dish.

                      • Garnish with sesame seeds and fresh cilantro if desired.
